You’ll need:

  • 1-2 eggplants
  • 1 stem of green onions
  • 1 tablespoon of dark soy sauce
  • 1 tablespoon of light soy sauce
  • 1 teaspoon of sugar
  • Vegetable oil

  1. You slice up the eggplants then fry each of them in vegetable oil (enough to cover the pan) for about 5 mins each side. Place on a plate once finished and let it rest for 5-10 mins
  2.  Make soy sauce mixture. Add dark/light soy sauce and sugar into a bowl and mix. Leave to the side.
  3. Add some more vegetable oil and add eggplants back in.
  4. Chop up green onions into small pieces. Stir in green onions with the eggplants into one pan and let it cook for 5 mins
  5. Add soy sauce mixture and stir evenly. Cook for 7 mins and then serve onto a plate 5. Serve with rice and enjoy!
