You’ll need:
- 1-2 eggplants
- 1 stem of green onions
- 1 tablespoon of dark soy sauce
- 1 tablespoon of light soy sauce
- 1 teaspoon of sugar
- Vegetable oil
- You slice up the eggplants then fry each of them in vegetable oil (enough to cover the pan) for about 5 mins each side. Place on a plate once finished and let it rest for 5-10 mins
- Make soy sauce mixture. Add dark/light soy sauce and sugar into a bowl and mix. Leave to the side.
- Add some more vegetable oil and add eggplants back in.
- Chop up green onions into small pieces. Stir in green onions with the eggplants into one pan and let it cook for 5 mins
- Add soy sauce mixture and stir evenly. Cook for 7 mins and then serve onto a plate 5. Serve with rice and enjoy!
